These Lucky Charms Sugar Cookies are the perfect cookie for any cereal lover! Every bite is sweet, slightly crunchy, and full of marshmallows. It's so simple, but SO good.

Heat oven to 325 °F. Line 2 or 3 sheet pans with parchment paper. Set aside. With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes. Add egg, egg yolk, and vanilla. Beat until smooth. Stir in flour, baking soda, and salt. Fold in cereal. Use a 3 Tablespoon scoop to portion dough onto prepared pans, about 6 cookies per pan. Flatten slightly. Bake for 20 minutes, until slightly browned around edges. Allow to cool on pan.
