Heat waffle iron according to manufacturer's instructions. In a medium bowl, beat egg whites to medium stiff peaks. Set aside. Whisk flour, baking powder, salt, and sugar together in a medium bowl. Add milk, egg yolks, melted butter, and vanilla. Whisk until smooth. Fold in egg whites. Spray waffle iron with cooking spray, or brush with oil. Ladle batter into waffle iron. Cook to desired degree of doneness.
