Soft and Chewy Valentine's Sprinkle Cookies…the perfect treat for Valentine's Day! Made in one bowl, with minimal ingredients, no refrigeration, and ready in about 30 minutes. SO. GOOD.

Heat oven to 350 °F. Line sheet pans with parchment paper. Set aside. With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla. Stir in flour and baking soda. Mix in sprinkles. Use a 1½ Tablespoon cookie scoop to portion dough onto prepared pans. Bake for 12-14 minutes, until light brown around the edges. Allow to cool on pans.
