Heat oven to 350 °F. Line sheet pans with parchment paper. Set aside. With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla. Stir in flour and baking soda. Mix in sprinkles. Use a 1½ Tablespoon cookie scoop to portion dough onto prepared pans. Bake for 12-14 minutes, until light brown around the edges.
